Mutton pieces are cooked together with crispy brown onions and a creamy blend of masalas and coconut milk.
Ingredients
1 kg mutton, cut into curry sized pieces
1 cup yogurt
2 Tbsp ginger-garlic paste
2 tsp chilli powder
1 tsp turmeric
1 cup oil
12-15 curry leaves
1 tsp cumin
1 cup grated onions
4 cardamoms and cloves each
1 cup grated tomatoes
1 cup coconut milk
Coriander leaves for garnish.
Method
1.Marinate meat in ginger-garlic paste, chilli powder and turmeric, leave for 6 hours. 2.Heat oil and add cumin, curry leaves followed by onions. 3.Stir-fry till onions are brown. 4.Add cardamoms and cloves and stir-fry till they get a little dark. 5.Add meat over high heat and stir fry till opaque. 6.Lower the heat and cook till water has been absorbed and fat separates. 7.Add tomatoes and cook till fat separates. 8.Finish by adding coconut milk and water. 9.Bring to a boil, simmer for a couple of minutes. 10.Serve hot garnished with the coriander leaves.
